You probably have noticed if you follow me on Instagram, I have a huge sweet tooth. I like fruits, I like chocolate, I like sugar. Not any kind of sugar tough. I like food that are naturally sweet, those who will bring me instant well-being, because it's good, but also a wellness in the long term, because they are full of nutrients and vitamins, and because I won't feel bloated or tired 10 minutes later.

Pancakes are a classic from my childhood, we ate them for breakfast, for snacks, even for dinner sometimes! The option wasn't very healthy though (white flour, white sugar, butter and Nutella...), but today I decided to share a recipe of delicious pancakes, a lot richer in nutrients and energy. This recipe is also gluten free, vegetarian and male approved!

For the pancakes
1 1/3 cups of almonds
2 eggs
1 cup of almond milk
1/2 cup of water
2 tbsp of coconut oil
1 tbsp of maple syrup
1tbsp (or more) of vanilla extract

For the berries jam
2 cups of berries (I used strawberries and wild bluberries)
1 cup of water
a dash of maple syrup

The recipe is extremely simple, you just have to blend almonds in a food processor into a flour, then add the other ingrediens and mix.
After that, just cook the pancakes a few minutes over low-medium heat on both sides until they are golden brown. Since we used almond flour, they will be more golden than if we would have used the usual white wheat flour.

For the berries jam, again the recipe is surprisingly simple. Just mix everything in a saucepan and let it simmer over medium heat until it's thicker. Et voilà!

This recipe is so delicious! I added some pieces of kiwi but feel free to add whatever fruit you like, the most important is to be creative and to enjoy!
